Beer Batter Waffles

I broke out the waffle maker this week. I think it's the first time since before Cati was born. Can you believe that? So much gets put on the back burner or forgotten when you have kids. Alex requested waffles for dinner and joked if waffles went well with beer. I said yes and found this recipe. The waffles were beyond delicious. I do, however, caution you when it comes to the type of beer used in these waffles because they take on the taste of the beer. It's subtle but obvious enough that you won't like the waffles if you use a beer you don't like.

2 cups self-rising flour
1 (12 fluid ounce) can or bottle beer
1/2 cup unsalted butter, melted
1/4 cup milk
2 eggs, separated
1 tablespoon honey
1 teaspoon vanilla extract

Preheat a waffle iron according to manufacturer's instructions. Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl; stir until the mixture is smooth. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter.

Spray preheated waffle iron with non-stick cooking spray. Ladle the batter into waffle iron. Cook the waffles until golden and crisp. Serve immediately.
